Kale, Yes! The Easiest Chips Ever.

Maybe you’ve seen kale chips at your local natural foods store but didn’t buy them because they cost the equivalent of a three-course lunch at your favorite restaurant. Well, there’s good news:  Making kale chips at home is easy, not at all expensive, and a really delicious way to get a good dose of protein, calcium, and iron in one crunchy mouthful (or two, or three). More good news: No fancy dehydrator or other equipment needed! If you've got an oven, a cookie sheet, and some kale, you're ready to roll!

Easy-Peasy Kale Chips
Serves 4

4 cups kale (tightly packed), washed, dried, and torn into chip-size pieces
1 tablespoon olive oil
Salt, to taste
Nutritional yeast, to taste (optional)

1. Preheat the oven to 200 degrees.
2. In a bowl, add kale and olive oil. Using your hands, caress kale to distribute oil. Season with salt and optional nutritional yeast, to taste.
3. Spread kale on a large baking  sheet (you may need two or three), making sure leaves don't overlap.
4. Bake in the oven for 15 minutes, then turn and bake 10 minutes more. Chips should be bright green and crispy.
Allow to cool before serving.

These don't come with a warning label when you make them at home, so you can probably eat as much as you want!
